A signature cuisine that preserves the unique style of Terres de l’Ebre, which is the ideal source of products traditionally used in Japanese cuisine such as eel, prawns, octopus, sea bass, tuna, brown meagre and rice from our own paddy fields.
Our menu is not only based on traditional cuisine but you will also find a selection of products from our territory which are not very common in Japanese cuisine, such as mantis shrimp, sea urchin, baby octopus, cuttlefish, shrimp, blue crab, sea cucumber, razor clams, oysters, caixetes and more.
Inspired by kintsugi, the Japanese art of repairing broken shards of ceramic pieces with resin mixed with gold dust that makes them unique and become more precious goods than they were. A thousand-year-old technique converted into our restaurant’s philosophy.
Our signature Japanese cuisine draws inspiration from a process of visible transformation, where the main ingredients and the essence of the menu are the products from the fish market and local producers, fishermen and artisans from Terres de l’Ebre, resulting in a culinary experience with personality that appeals to all your senses.
At the helm of the kitchen at Restaurant Kintsugi is Chef Hiroshi Shimamura, certified as an Edomae Sushi instructor, the traditional Tokyo style practiced since the 18th century. With training in Japan and more than 20 years of experience in Barcelona, Hiroshi brings an authentic and respectful vision of classical Japanese cuisine.
